I have an opportunity to purchase a 1986 c-hawk at a good price but the 12degree deadrise is of concern. The boat is a 25ft. pilothouse. It would be used in the chesapeak bay. Would I be beat to death in this boat?

I think that would be a fine boat for the bay. Granted, in nasty weather, a deep V will ride better, but the trade off will be the draft, and tendency to pitch too much at slow speeds, or at rest.
I'd be very happy w/ a 25 Chawk pilot house.
Their strong presence in the bay should give some indication as to their popularity in these waters.

I just traded my 25' 1990 c-hawk pilot house for a 2008 26' steiger craft Miami. I liked the boat and think it will serve you well.
